
Put about three tablespoons of a larger leaf tea (Yue Guang Bai white tea or Houjicha) in a 700ml teapot

Pour in water at 90° C (the temperature indicated on the packaging) onto the leaves. A kettle with temperature control helps

Place the lid on the teapot and let it infuse for 2-3 minutes

Pour some of the tea into the bowls and leave the rest of the tea in the pot to serve later

When the tea gets too strong, add more hot water to the teapot
