Alvaro Diniz was one of the five founders of this vegetarian restaurant, which opened as a cooperative in 2006 and since February 2015 he has become the owner. He is very concerned about sustainable development and aims to change the world “through the mouth”. His creative vegetarian cuisine is based on fair trade and locally produced ingredients. The Cor de Tangerina organises various workshops and once a month holds a small market, selling organic products. The restaurant is very popular not only because of its tasty, healthy and beautifully presented dishes, but also because of its delightful terrace, overlooking Guimarães Castle. The Camélia teas have changed the lives of Álvaro Diniz and Liliana Duarte, who is his beverage manager. They had never experienced such fine quality teas before and now, in addition to serving the teas in the restaurant, they also use them as an ingredient in the kitchen.
