Characteristics

The Miumori Matcha Premium Bio is fresh, extremely green matcha with complex aromas. Before the harvest, the leaves are placed in the shade for three weeks so that their aromas become more concentrated, and to maintain the delicacy of the shoots. Like this the Miumori Matcha is not bitter and demonstrates much umami, with sweetness and fruity notes. This matcha is cultivated by the Hayashi family in Kirishima. Their tea plantation is surrounded by the Kirishima mountains, the tops of which are isolated in an ocean of fog, making them look like islands (kiri – fog, shima – island). The Miumori Matcha is produced in a limited quantity.
