Characteristics

This Sencha Zairai Organic from Kirishima (in southern Japan) is made by Shutaro Hayashi and his family from very old tea plants grown from seed. It was Shutaro’s great-grandfather who brought the first plants from Shizuoka to Kirishima, thus becoming a pioneer of tea growing in this area of ​​the country. Nowadays, tea plants grown from seed (Zairai) are very rare in Japan, as the vast majority of plants are obtained from cuttings, which produce a more homogeneous tea and in greater quantity. However, unlike cuttings, each Zairai produced plant is unique, thus the blend of plants with these diverse characteristics results in more complex and well-structured teas.
